We only stock Free Range pork here at Seville butchers. We are supplied by Happy Valley and St. Bernards.
All our roasting pork has a layer of crackle over the top.
Cooking Tip: For the perfect roast pork spray the crackle with vinigar or lemon juice with lots of salt! Put into a really hot pre-heated oven of 220 degrees, when you see bubbling turn the oven down to 180 degrees and cook for approximately 1 hour per kg.
